Ensalada Rosa - Prawn Salad

This is a very simple salad which is often found in the tapas cabinet. It makes a great base to be served with a larger accompanying salad or on its own as a light lunch or even as part of a buffet.

Ingredients:

• half an iceberg lettuce, shredded
• 250g cooked, peeled prawns
• 6 crab sticks, chopped
• 2 ripe tomatoes, chopped
• 4 dessert spoons of mayonnaise
• 1 dessert spoon of tomato ketchup
• a dash of brandy
• a dash of fresh lemon juice
• salt and freshly ground black pepper


First combine the mayonnaise, ketchup, brandy & lemon juice and mix until you have a nice pink coloured sauce. Then toss together the lettuce, prawns, chopped crab and tomatoes in a big mixing bowl (this is best done with your hands). Add the pink (Marie Rose) sauce, salt and pepper and stir well with a large spoon until everything is coated in the sauce.
